Yacon and Rice Salad
The superfood root-like vegetable come from Andes can be used as an organic sweetener and helps diabetics and persons suffering from digestive problems by eating it since it contains a type of sugar called fructooligosaccharide, which can lower levels of triglycerides and low-density lipoprotein, the “bad” cholesterol.
It contains benefits as well like polyphenols to help protect people from a variety of diseases like improving the function of the inner lining of the blood vessels, increasing protective HDL cholesterol (the good cholesterol), and promoting anti-platelet and anti-inflammatory activity.
1) Cut yacon into pieces and soak in vinegar to remove bitterness.
2) Mix grain mastard and apple cider vinegar and olive oil.
3) Prepare steamed rice with any vegetable scraps.
4) Mix the rice and yacon with the mastard sauce.
