Leafy Green Tempura for September

Deep fry leafy greens, but very very crispy fry!

Ingredients

Shiso leaves as appropriate
Mulukhiya as appropriate
For blended Oil → Vegetable oil : Sesame oil = 10 : 1
For batter →  egg + water : flour = 1 : 1 by volume

Step 1

For leaves, wash and dry them gently with paper towels.

Step 2

Once the ingredients are ready, heat 1 1/2″ (3 cm) of the oil to 356F (180C) in a deep fryer or pot.

 

Step 3

To make batter, mix cold flour, egg and water very gently for a few seconds in a large bowl.
Do not overmix the batter. You can remain the lumps in the batter.
Better keep cold the batter.

Gently lay each leaf on top of the very cold batter to coat one side.
Drop leaves, batter-side -down into oil without turning until underside is golden, about 15 to 20 seconds.

Transfer to paper towels to drain.
Serve immediately, dipping in salt.
