Bess’ White Sweet Soup for December

Turnip and Pac choi Sweet Soup

Ingredients  (serves 3)

3 turnips
1 pac choi
1/2 onion
kobu 10cm
1 cup soy milk
5 cups water
Olive oil  as you please
salt  as you please


Step 1

Cut turnips, onion, and pac choi.
Keep the turnip leaves aside.


Step 2

Mix diced veghitables, water, kobu and salt in a pot and heat to a low boil over medium-high heat and then reduce the heat to medium-low.
Cover and simmer the soup skimming the scum, until the vegitables are fork-tender.
Add soy milk, bringing it to boil.


Step 3

Take the simmered kobu out of the pan and add olive oil to the soup in the pan.
Blend them until the soup is completely smooth.
Top with dried coriander if you like.

Keep the kobu aside.

Serve hot!

Sesame oil
Dried red pepper
